It’s been a while, as I’ve been off on holiday enjoying myself, but I’m back with a whole lot of things I’ve been making over the summer, so keep checking for new recipes, starting with this quite autumnal loaf.
110g seeded dates, finely chopped
80ml boiling water
½ tspn bicarbonate of soda
90g maple syrup
90g butter, softened
75g brown sugar
120g wholemeal self-raising flour
75g plain flour
Combine dates and water in a small bowl. Stir in soda; allow to stand for 5 mins. Stir in the syrup.
Meanwhile, beat butter and sugar together until light and fluffy.
Add eggs, one at a time, beating until just combined between additions.
Add butter mixture to date mixture; stir in sifted flours, in two batches.
Pour into a prepared loaf tin.
Bake at 180C in a preheated oven for around 50 mins. Allow to cool in the tin for 10 mins before turning out onto a wire rack to cool.
