Last weekend, the Hungry Dog made an amazing banana bread. He naturally (being a hungry dog) made a single cupcake as well as the loaf so it would come out of the oven earlier and he could eat it before the big cake was cooked. This is a cake to be eaten straight off the wire rack, still a bit too hot for your fingers to take, but so good.

His bananas were extremely overripe (see picture), so he used lightly less sugar than specified. He also says you can use as many bananas as you like, but remember that the more bananas you use or the less ripe they are, the longer it will take to cook, so keep poking a knife in until it comes out clean.

100g dark chocolate, roughly chopped

225g self-raising flour

¼ tspn salt

125g sugar

2 eggs

60ml milk

75g melted butter

2 ripe mashed bananas

Sift flour, baking soda and salt into a bowl. Mix in sugar. In another bowl, beat the eggs. Stir in milk, butter, banana and chocolate. Mix quickly into dry ingredients, stirring just until the ingredients are combined. Bake at 180C for 45-55 minutes in a lined loaf tin. Leave in tin for 10 mins before turning out onto a wire rack.
