These cookies are good for pretending to be healthy and virtuous when you want to bake something delicious. These are great for whipping up a quick little something because they take almost no effort. As you can see, there’s nothing really virtuous about them.

I added the seeds myself, and if you don’t have craisins, use raisins or whatever dried fruit you like. Mix and match the muesli bit for maximal enjoyment. I also reduced the sugar content from the original recipe (which at 220g seemed excessive to the point of obscenity).

90g oats

150g flour

175g sugar

2 tspn cinnamon

35g craisins

55g chopped dried apricots

70g flaked almonds

35g mixed seeds

125g butter

2 tbspns golden syrup

½ tspn bicarbonate of soda

1 tbspn boiling water

Put the dry ingredients in a bowl, keeping back a few flaked almonds for decoration later.

Melt the butter and golden syrup together.

Add combined soda and boiling water. Combine the wet and dry ingredients with a wooden spoon until thoroughly introduced to each other.

Roll into golf-ball sized balls, sprinkle a couple of flaked almonds on top, and bake on a lined tray at 150C for about 15-20 mins.
